Raise your hands if you have some strawberries (or any fruit for that matter) sitting in your fridge right now, that are just a little bit past their prime.. I do, and I've got NO ROOM in EITHER of my freezers to save them for smoothies so I had to come up with the next best thing. This recipe was inspired by something I made for someone near and dear to me heart. Ms. Betty, I hope you are reading this.
Today I made these spiked strawberry mint sparklers. I have a ton of pineapple mint growing in my garden so it was the perfect compliment to this slightly sweet, super fizzy cocktail. I love how easily adaptable this recipe is, if you have blueberries- use blueberries, it's great no matter what. Also, you can omit the dessert wine if you don't have any on hand, but my preference for this recipe is the 2017 Late Harvest from David Coffaro Winery. This wine literally smells and tastes like strawberry jam and is a great component in this cocktail.
*Also, if you don't keep sparkling wine around for things like this, throw in whatever you have, coconut Le Croix would be good- try those weird lime flavored White Claws that always seem to be left over from a variety pack. Seriously, Lime White Claw Is An Abomination...Change My Mind.
P.S. I have a few recipes waiting in the wings for using lime White Claw up- but you'll just have to be patient. :)
-Fresh strawberries are great, but if you happen to have some other frozen fruit on hand, that works fine too.
-The Sugar- I'm going with good old fashioned white sugar, but use whatever your little heart desires, I'm not gonna know either way. :)
-Mint- This really has to be fresh. If you don't have fresh mint, just leave it out.
-Is this drink too sweet for you? Add a few shots of good quality Vodka and see how you feel. :)
